Chicory salad with brie & oranges

Ingredients
- 500g. chicory
- 2 oranges
- 100g. brie
- 1 lemon
- 4 tbsp. walnuts
- 2-3 tbsp. raisins
 
Method of preparation
Clean and cut up the chicory to thin strips. Peel the oranges and cut them into wedges. Cut the brie into slices. Mix it together with walnuts and raisins. Press the juice of the lemon over the salad. Serve with french bread.
 
Tip: Garnish with scallions. Very tasty next to fish or chicken.

Chicory quiche with ham

Ingredients for 4 persons
- 450g. chicory
- 250g. short crust pastry (shop bought)
- 125g. ham cubes
- 250g. Edam cheese (grated)
- 3 eggs
- 200ml. crème fraîche
- 50g. butter
- pepper and salt
 
Method of preparation
Preheat the oven to 200°C (392F). Lightly grease a 5 cm (2”) deep springform pan (Ø 23 cm/9”). Roll out the pastry on a light floured surface. Line base and sides of the springform pan with the short crust pastry. Don’t cut off the edges of the pastry yet. Before placing it in the oven make sure that the pastry has been pricked with a fork. Blind bake the pastry for 5 minutes. In the mean time mix the crème fraîche with the eggs in a bowl. Add the ham cubes and 100 gram of the grated edam cheese. Flavour the mix with some salt and pepper. Cut the chicory in half, from top to bottom (large heads of chicory can be cut into 4 pieces). Pour the mixture into the springform pan and press the pieces of chicory (just below the surface) slightly into the mixture. Sprinkle the remaining grated cheese on top of the chicory and bake the quiche for 25 minutes in the oven, or until set. Serve the quiche warm with a salad or cold (in small pieces) as an appetiser.
 
Tip: Serve with a fresh salad.

Stir-fried chicory with honey

Ingredients
- 1kg. chicory
- 150g. goat's cheese
- 75g. pine nuts
- 4tbsp. liquid honey
- 2tbsp. olive oil
- 2tsp. thyme (dried)
- pepper and salt
 
Method of preparation
Clean the chicory and cut it into 4 pieces from top to bottom. Roast the pine nuts in a frying pan without any oil: when they become golden brown take them out of the pan to cool down. Heat the olive oil in a frying pan and stir-fry the chicory approx. 1 minute on high heat. Add the honey and thyme and stir fry the chicory another 3 minutes. Flavour the chicory with some salt and pepper. Take the chicory out of the frying pan and put it into a serving bowl. Cut the goat’s cheese into small pieces, and sprinkle it together with the roasted pine nuts on top of the chicory. Serve immediately and enjoy.

Chicory packets from the oven

Ingredients
- 8 small heads of white chicory
- 8 small heads of red chicory
- 8 slices of puff pastry
- 8 slices of cheese
- 8 slices of ham
- handful of nuts
- balsamic vinegar
- pepper and salt
 
Method of preparation
Preheat the oven to 225 ° C. Defrost the puff pastry and in meantime cook the chicory in a little water for about 5 minutes. Let the chicory drain well. Put a slice of ham on each slice of puff pastry, then a head of chicory and a slice of cheese. Sprinkle with a little salt and pepper and bring the four corners of the pastry to the center, pinching the edges together with moistened fingers. Place the packets on the baking sheet and bake them about 25 minutes in the preheated oven. Serve with a salad of red chicory and nuts sprinkled with a little balsamic vinegar.
 
Tip: You can also sprinkle the parcels with a little grated cheese, before placing in the oven.

Tagliatelle with chicory

Ingredients
- 800g. chicory
- 3 spring onions
- 250g. smoked bacon strips
- 300g. green tagliatelle
- 4tbsp. crème fraîche
- 1tbsp. white-wine vinegar
- 3tbsp. olive oil
- pepper and salt
 
Method of preparation
Cook the noodles according to package directions. Clean the spring onions, cut about two thirds into 1cm pieces and cut the remaining green very fine. Wash chicory and cut the heads into thin strips lengthwise.Mix in a large bowl with 2 tablespoons oil, the vinegar and salt and pepper to taste. Fry the bacon in a skillet over high heat for 4 minutes. Turn the heat lower, add the 1cm pieces of spring onion and the chicory to the bacon strips and fry 5 minutes. Drain the pasta in a colander and toss with the chicory. Top each serving with a tablespoon of crème fraîche and a sprinkling of the finely cut green of the spring onions.

Chicory wrap

- 2 heads of chicory
- 4 tortilla wraps
- 4 large slices of ham or yorkham
- tub cream cheese
- balsamic vinegar
 
Method of preparation
Clean the chicory and peel the leaves from the heads. Spread the tortilla wraps with herb cheese and add a dash of balsamic vinegar. Place a slice of ham on each wrap, then the chicory leaves, about 3 leaves per tortilla. Roll the tortillas tightly and cut into pieces about 1.5 cm thick.

Chicory salad with pear, apple & blue cheese

Ingredients
- 4 heads of chicory
- 2 apples
- 2 pears
- 50g. spicy blue cheese
- 50g. crème fraîche
- fresh parsley/chervil/dragon
- 5tbsp. olive oil
- 4tbsp. cider vinegar
- walnuts for garnish
 
Method of preparation
Clean the chicory and peel the leaves from the heads. Wash and core the apples, cut them into quaters and then into slices. Clean the pears, cut them into eighths and remove cores. Place the chicory, apple, pear and herbs in a large bowl. For the dressing mix the blue chees, crème fraîche, olive oil, cider vinegar and 6 tablespoons of water about 15 seconds in a blender. Taste the dressing to make sure it is acid enough to compensate the bitter taste of the chicory. Adjust if necessary. Pour the dressing over the salad and toss well. Garnish with a few crumbled walnuts.

Chicory soup

Ingredients
- 375g. chicory
- 1 onion
- 50g. butter
- 1ltr. of broth
- 250g. tomatoes
- 2 egg yolks
- 1/8ltr. wipping cream
- 100g. cooked ham
- pepper and salt
 
Method of preparation
Wash the chicory and remove the bitter core. Cut the chicory into small -1cm- strips. Saute the chopped onion in the soup pot, add the chicory and cook briefly. Add the broth and let simmer for a few minutes. Peel the tomatoes, cut into small cubes and add them to the soup. Do not allow the soup to boil from this point on. Mix the 2 egg yolks with the cream and add it to the soup while stirring. Finally, add the chopped ham and pepper and salt to taste.

Chicory boats (snack)

- 2 small heads of white chicory
- 1pkg. egg salad
- fresh chives
 
Ingredients (red chicory boats)
- 2 small heads of red chicory
- 1pkg. celery salad
- walnuts
 
Method of preparation
Wash the chicory. Peel the leaves from the heads and fill the red ones with celery salad, the white with egg salad. Garnish the celery salad with a walnut half and the egg salad with a few snippets of fresh chives.
 
Tip: Delicious as a snack or appetizer.

Chicory under a roof of tortilla chips

Ingredients
- 750g. chicory
- 500g. minced beef (hamburger)
- 1 onion
- 4 tomatoes
- 250g. corn kernels
- 100g. tortilla chips
- 100g. grated cheese
- tabasco
- 2tsp. honey
- pepper and salt
 
Method of preparation
Preheat the oven to 200ºC. Clean the chicory and boil the heads about 7 minutes until al dente. Slice the onion and tomatoes into cubes. Fry the chopped onion in a frying pan, add the ground beef and fry till brown. Add the diced tomatoes. Fry them for 2 minutes and add the corn kernels, dash of tabasco, salt, pepper and honey. Place the drained chicory on the bottom of a greased baking dish. Divide the corn mixture over it. Crumble the tortilla chips over the corn mixture and sprinkle the dish with grated cheese. Place the baking dish in the middle of the oven for about 20 minutes, until hot and golden brown. Serve with brown rice.

Grilled chicory with Parma ham

Ingredients
- 4 heads of chicory
- 4 slices Parma ham
- 75g. (blue) brie
- 1tbsp. white-wine vinegar
- 4tbsp. olive oil
- pepper and salt
 
Method of preparation
Preheat the grill on the highest setting. Clean the chicory and cook it for 2 minutes in plenty of water. Halve the(well drained) heads of chicory lengthwise and place them in a greased baking dish. Drizzle the chicory with 1 tablespoon oil. Cut the Parma ham into strips and scatter them over the chicory. Place the chicory under the grill for ca. 8 min. Cut the brie into 8 slices. For the dressing whisk together 3 tablespoons oil, white wine vinegar, salt and pepper. Arrange the chicory on 4 plates and divide the cheese and dressing over the chicory.
 
Tip: Delicious as an appetizer or side dish.

Red chicory salad with apple & walnuts

Ingredients
- 500g. red chicory
- 2 apples
- 75g. chopped walnuts
- 3tbsp. oil
- 2tbsp. lemon juice
- 1tsp. honey
- fresh chives
- pepper and salt
 
Method of preparation
Clean the red chicory and cut into thin rings. Peel the apples, cut them into cubes and mix them with the chicory. For the dressing, mix the oil, lemon juice, honey, salt and pepper. Pour the dressing over the red chicory and toss well. Garnish the salad with walnuts and chives.
